Ingredients:
8 eggs
1 cup spinach
1 bell pepper, chopped
1 tomato, chopped
1 tbsp olive oil
Salt and pepper to taste
Instructions:
Beat eggs in a bowl.
Heat oil in a pan, add vegetables, and cook for 2 minutes.
Add eggs, cook until set, fold, and serve.
