Ingredients:
4 bell peppers, halved and seeded
1/2 lb lean ground beef
1 cup cooked quinoa
1 cup tomato sauce
1 onion, chopped
1 tbsp olive oil
Salt and pepper to taste
Instructions:
Preheat oven to 375°F (190°C).
Heat oil in a pan, cook beef and onion until browned.
Mix in quinoa and tomato sauce.
Stuff peppers with the mixture and bake for 30 minutes.
