SUNDAY RECIPES: BEEF & QUINOA STUFFED PEPPERS!

Prep Time: 15 minutes

  • Cook Time: 30 minutes

  • Ingredients:

  • 4 bell peppers, halved and seeded

  • 1/2 lb lean ground beef

  • 1 cup cooked quinoa

  • 1 cup tomato sauce

  • 1 onion, chopped

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Heat oil in a pan, cook beef and onion until browned.

  3. Mix in quinoa and tomato sauce.

  4. Stuff peppers with the mixture and bake for 30 minutes.

  • Macros (per serving, serves 4):

  • Protein: 15g

  • Carbs: 28g

  • Fats: 9g

  • Total Calories: 250
